Tomato Rice

Ingredients

• 1 cup soaked Nilgiris Ponni rice
• 1 bunch of finely grinded mint leaves
• 4 blanched and chopped tomatoes
• 2 finely sliced onions
• 2 tsp fennel seeds
• 1 bay leaf
• 2 green cardamoms
• 1 clove
• 1 tsp ginger-garlic paste
• 1 tsp garam masala
• Salt and pepper as per taste

Procedure

• Grind the mint leaves and blanched tomatoes to semi-liquid paste
• Take a pressure cooker and add 2 tsp vegetable oil and fennel seeds to it. Once heated, add ginger-garlic paste and sliced onions, cook till golden brown.
• To this, add the soaked rice, tomato-mint paste, bay leaf, cardamoms, clove, garam masala, salt and pepper, and most importantly 1-1/2 cups of warm water.
• Close the pressure cooker and allow it to cook for at least 5 whistles.
• Sprinkle some freshly chopped coriander and serve hot.
