ABIRAMI 1KG HANDPOUNDED PONNI RAW RICE
Kathal ki Biryani
Ingredients
For making rice:
1 cup rice
4 cups water
1 bay leaf
3-4 black peppercorns
2 cloves
1 black cardamom
2 green cardamom
For making Biryani :
4-5 tsp ghee
350 gm raw Jackfruit
2 bay leaf
3-4 black peppercorns
1 black cardamom
2 green cardamom
2 cloves
1 inch cinnamon
1/2 cup chopped onion
1 tsp ginger garlic green chilli paste
Puree from 2 medium sized tomatoes
1 tbsp curd
1/2 two turmeric powder
1/2 tsp chilli powder
1/2 tsp garam masala
1 tsp meat masala
Salt as per taste
2 pinch saffron
3-4 tsp warm milk
1/2 cup cashew nuts and raisins
1/4 cup fried onions
2 tsp chopped cilantro
Steps
45 minutes
1.First of all prepare the rice and soak the saffron strands in the warm milk.
2.Wash rice and heat a vessel with water and all the dry whole spices with rice. Cook the rice.
3.When the rice is cooked 80% then strain the water from the rice and spread the rice on a big size plate.
4.In the meantime wash and chop the raw Jackfruit and fry them in oil till golden brown in colour and keep them aside. Also fry the cashew nuts and raisins.


5.Heat a vessel with ghee and put all the dry whole spices in it.

6.Saute it for 30 seconds and then put the chopped onion in it. Cook it till the onion becomes transluscent and then add the ginger garlic chilli paste in it.

7.Cook till the raw smell of ginger and garlic has gone.
Then add the tomato puree along with the curd, spices and salt.



8.When the masala release oil then add the fried Jackfruit in it and cover it for 5 minutes.

9.Then add the prepared rice over it and put the soaked saffron milk, fried dry fruits and fried onion over it.



10. Cover the lid and cook it on low flame for 10-15 minutes.
Then your kathal Biryani is ready.

11.Garnish with chopped coriander leaves and serve hot with raita.
